TODAY’S RECIPE: Steak lettuce cups

EASY party canapes. Makes: 20.

Ingredient­s

200g fillet steak, excess fat trimmed

4 Baby Gem lettuces

½ tbsp rapeseed oil

CHIMICHURR­I:

1 tbsp chopped parsley

½ tbsp rapeseed oil

1 garlic clove, crushed

1 tsp red wine vinegar Pinch dried oregano

CHILLI & LIME SAUCE:

¼ red chilli, chopped

1 lime, zested, juiced

½ tsp fish sauce

1 tsp groundnut oil Pinch sugar

Method

1 Take steak out of fridge 30 minutes before frying. Mix chimichurr­i ingredient­s with 1 tbsp water, season and set aside. Mix ingredient­s for chilli & lime sauce and set aside. Separate Baby Gem lettuces so you have 20 leaf cups. 2 Heat non-stick frying pan over medium-high heat. Coat steak in oil, season, then fry for three minutes each side. Set aside for ten minutes then cut into 20 slices. Place a steak strip in each cup. To serve, top half with chimichurr­i and half with chilli & lime sauce.
