TODAY’S RECIPE: Quick chicken hummus bowl
PERFECT summer lunch. Serves: 2.
Ingredients
200g hummus 1 small lemon, zested and juiced 200g pouch cooked mixed grains 150g baby spinach, roughly chopped 1 avocado, sliced 1 cooked chicken breast, sliced 100g pomegranate seeds ½ red onion, finely sliced 2 tbsp toasted almonds
Method
1 Mix 2 tbsp of hummus with half lemon juice, all lemon zest and enough water to make a drizzly dressing. Squeeze grain pouch to separate grains, then divide between two shallow bowls and toss through dressing. Top each bowl with a handful of spinach.
2 Squeeze remaining lemon juice over avocado, then add half to each bowl. Divide cooked chicken, pomegranate seeds, onion, almonds and rest of hummus between the bowls. Gently mix everything together.
