RECIPE: Ten-minute couscous salad


GREAT for your lunchbox. Serves: 2. Ingredient­s 100g couscous 200ml hot vegetable stock 2 spring onions 1 red pepper ½ cucumber 2tbsp pesto 50g feta, cubed 2tbsp pine nuts


1 Tip couscous into a large bowl and pour over stock. Cover and leave for ten minutes until fluffy and all stock has been absorbed. 2 Meanwhile, slice onions and pepper, and

dice cucumber. Add to couscous, fork through pesto, crumble in feta and sprinkle over pine nuts to serve.
