TODAY’S RECIPE: Easy piri-piri pulled pork
MELTS in the mouth. Serves: 4.
Ingredients
1 red chilli
4 garlic cloves
1 tbsp smoked paprika
1 tbsp dried oregano
1 tsp cumin seeds
½ tsp chilli flakes, plus pinch to serve
100ml red wine vinegar 400g can chopped tomatoes
800g skinless pork shoulder
Method
1 Tip all ingredients except pork into blender, season with salt and blitz until smooth. Sit pork in casserole dish and pour over tomato mixture. Swill out blender with 200ml water and pour over pork. Leave for one hour to marinate. 2 Heat oven to 170c/150c fan/gas 3½. Cover pork with foil and cook for two hours until tender. If sauce dries out, add splash of water. 3 Use two forks to shred meat into sauce, adding pinch of salt and chilli flakes. Serve in buns, on top of jacket potatoes or in tacos.
