Protein power pancakes

• 4 bananas: 3 mashed,

• thickly sliced

• 2 eggs

• ¼ tbsp baking powder

• 2 tbsp peanut butter powder

• Calorie-controlled cooking spray

• 2 tbsp low-calorie chocolate syrup

• 10g unsalted peanuts, chopped

PUT THE mashed banana in a bowl. Whisk the eggs in a jug then add to the banana along with the baking powder and peanut butter powder, whisking until the mixture is smooth and combined. Heat a large non-stick frying pan over a medium-high heat and mist with cooking spray. Add 3-4 spoonfuls of mixture per pancake and cook for 2 minutes, until the pancakes feel firm and develop dark spots, then flip and cook for a further 2 minutes. Transfer to a plate and keep warm. Repeat with the remaining mixture to make 12 pancakes. Serve three pancakes per person, topped with banana slices, chocolate syrup and peanuts.
