Scrambled eggs with chives & smoked salmon

• 2 eggs

• 60g smoked salmon

• 1 tsp snipped fresh chives,

LIGHTLY mist a non-stick frying pan with cooking spray and set over a medium heat. Whisk the eggs in a jug and season well. Pour into the frying pan and cook, stirring, for 3-4 minutes until softly scrambled. Remove the pan from the heat. Serve the scrambled eggs topped with the smoked salmon and garnished with the chives.
