TODAY’S RECIPE: Stuffed pepper bake

FAMILY favourite. Serves: 4.

Ingredient­s

400g microwavab­le mixed grains 130g feta, crumbled Half bunch of mint leaves, chopped 400g can tomatoes 1 lemon, zested and juiced 1 tbsp honey 4 mixed peppers, halved, stalk intact

Method

1 Heat oven to 220c/200c fan/gas 7. Mix grains, feta and mint in a bowl with 1 tbsp hot water to loosen, then season. Mix tomatoes, lemon zest and juice and honey in an ovenproof dish. 2 Arrange peppers over tomato mixture, cut-side up. Fill peppers with feta and grains mixture. Cover with a lid or foil and bake for 30 minutes. Uncover and bake for five minutes until peppers are soft and filling is golden. Sprinkle with toasted pine nuts to serve.
