TODAY’S RECIPE: Lemon curd cheesecake­s

ZINGY flavoured dessert. Serves: 4.

Ingredient­s

100g digestive biscuits

50g unsalted butter, melted

FOR FILLING

250g lemon curd

300ml double cream

100g full-fat soft cheese

FOR DECORATION

75ml double cream

1 tbsp icing sugar

Lemon slices

Method

1 Blitz biscuits in a food processor to fine crumbs. Mix with melted butter, then press into bases of four dessert glasses. Chill for ten minutes. 2 Spoon 25g lemon curd over each biscuit base. Whisk remaining lemon curd with double cream and soft cheese until smooth. Divide lemon filling between the glasses, then chill for at least one hour or overnight. 3 For topping, beat cream with icing sugar using an electric whisk. Spoon into a piping bag and swirl over each cheesecake. Decorate with slices of lemon.
