TODAY’S RECIPE: Chargrille­d butter cabbage

NEW way to enjoy a favourite veg. Serves: 4-6.

Ingredient­s

1 large white cabbage 100g salted butter 2 tbsp rapeseed oil 1 garlic clove, crushed ¼-1 chilli, deseeded and finely chopped 2 limes, zested and juiced

½ tsp ground pepper

Method

1 Cut cabbage into wedges, keeping stalk intact so leaves stay together during cooking. 2 Melt butter in a saucepan over a low heat. Remove from heat, stir in oil, garlic, chilli, lime zest and juice, pepper and pinch of salt.

3 Brush spiced butter mixture over one side of each cabbage wedge. Cook in a large frying pan or on a barbecue until charred on one side. Repeat until all sides of the cabbage wedges are seared.
