RECIPE: Rum-glazed pineapple with lime creme fraiche

NAUGHTY dessert for adults. Serves: 4-6.

Ingredient­s

100 ml dark rum

2 tbsp light brown soft sugar

¼ tsp ground nutmeg

¼ tsp ground allspice

¼ tsp ground cinnamon

200 ml creme fraiche

2 limes, zested and juiced

1 pineapple, peeled and cut into 8 wedges ½ scotch bonnet chilli, deseeded and chopped (optional)

Method

1 Heat rum in a small pan over a low heat with 50 ml water and stir in sugar until it dissolves. Bring to boil until mixture thickens. Remove from heat and stir in spices. In a bowl, mix creme fraiche with lime zest and juice.

2 Heat a griddle pan over a high heat and cook pineapple for a couple of minutes on each side until charred. Turn heat to medium and brush with rum syrup a few times, moving wedges around the pan to stop them burning.

3 Remove from pan, sprinkle with chilli, if using, and serve with lime creme fraiche.
