TODAY’S RECIPE: Creamy courgette and bacon pasta
QUICK and tasty dinner. Serves: 4. Ingredients
1 tsp olive oil
150g diced pancetta 4 courgettes, grated 1 garlic clove, crushed 300g tagliatelle 1 tub creme fraiche Handful freshly grated parmesan
Method
1 Heat olive oil in a frying pan and sizzle pancetta for five minutes until starting to crisp. Turn up heat and add courgette. Cook for five minutes until soft and starting to brown. Add garlic and cook for a minute.
2 Cook pasta according to pack instructions and reserve a cupful of cooking water. Drain tagliatelle and add to frying pan with bacon and courgette. Over a low heat, toss together with creme fraiche and half the parmesan, adding a splash of pasta water if you need to loosen the sauce. Serve in bowls with rest of parmesan scattered over.
