TODAY’S RECIPE: Miso broccoli, egg & quinoa salad

TASTY and full of goodness. Serves: 1. Ingredient­s

100g thin-stemmed broccoli spears

1 egg

2 tsp white miso paste 1 lime, juiced

125g cooked quinoa 70g peas 3 radishes, sliced ½ tbsp sesame seeds

Method

1 Bring pan of water to boil. Add broccoli and cook for three minutes. Remove with a slotted spoon and leave to cool. Lower egg into water and simmer for six minutes. Drain and put in a bowl of cold water.

2 Whisk miso and lime juice then toss with quinoa, peas, radishes and cooked broccoli. Peel egg, slice in half and arrange on top of quinoa. Sprinkle with sesame seeds.
