RECIPE: Hot smoked salmon grain bowl with dill yoghurt

DELICIOUS and nutritious. Serves: 4.

Ingredient­s

3 tbsp white wine vinegar

½ tsp caster sugar

80g cucumber, sliced

4 radishes, sliced

1 lemon, juiced

2 x 250g pouches ready-cooked quinoa

200g natural yoghurt

1 tbsp dill, chopped, plus extra to garnish

4 hot smoked salmon fillets

3 cooked beetroot

Method

1 Combine vinegar and sugar with a pinch of salt in a bowl. Add cucumber and radishes, toss to combine and set aside.

2 Reserve 1 tsp lemon juice and pour rest over quinoa in another bowl. To make dressing, mix yoghurt, chopped dill and 1 tsp lemon juice.

3 Divide quinoa between four bowls and top with salmon, sliced beetroot and pickled vegetables. Drizzle over dressing and garnish with remaining dill.
