TODAY’S RECIPE: Mini quiches

PERFECT for a picnic. Makes: 18-20.

Ingredient­s

300 g shortcrust pastry

Plain flour, for dusting

4 rashers back bacon, chopped

Vegetable oil, for frying

100 g Gruyere cheese, grated 2 medium eggs 125 ml double cream

Method

1 Roll out pastry on floured surface until thin. Cut out circles that are 1 cm larger than holes of a tartlet tin. Press pastry into base and up side of tartlet holes. Chill for 30 minutes.

2 Heat oven to 200 c/180 c fan/gas 6. Line each pastry case with a piece of foil and fill with baking beans. Bake for ten minutes, then remove foil and beans and bake for another five minutes. Fry bacon in a little oil until crisp. 3 Divide bacon and half the Gruyere between cases. Beat eggs and cream together, then pour over bacon and cheese until cases are almost full. Scatter over remaining cheese. Bake for 20 minutes until golden and puffed up. Leave to cool, then chill before serving.
