ULTIMATE CRUNCH

THIS viral recipe from the Michelin-trained chef and TikTok star @poppy_cooks, which has more than 60 million views online, comprises thinly sliced potato cooked in beef dripping, goose fat or garlic-infused cream for three hours, before being compressed in a loaf tin for 12 hours, cut into chunks and deep fried.

MICHELIN-STARRED MASH

THE original Michelin-starred potato recipe, from the late chef Joel Robuchon, was for mashed potatoes. He used Ratte potatoes, boiled and finely sieved, then mixed with boiled milk, 250g cold butter and seasoning, before being sieved again.

SWEET-AND-SAVOURY DESSERT

SERVED at Michelin-starred London restaurant Trivet, the ‘Hokkaido potato’ is a sweet-and-savoury dessert, featuring paper-thin mille feuille pastry made from baked potato, with layers of white chocolate mousse and sake gelato.

NIGELLA’S TWIST ON ROASTIES

THE Domestic Goddess’s twist on roast potatoes uses baby potatoes which are steamed, crushed and roasted in oil for half an hour, before being sprinkled with sea salt and apple cider vinegar.

SO POPULAR they’ve been on the menu at London’s Quality Chop House since they were created in 2013, these confit potatoes are Maris Pipers sliced, baked and fried in duck fat with a dressing of mustard, vinegar and lemon juice. Fans can even buy them online to cook at home.

THE KING OF PIES

INVENTED by chef Calum Franklin, known as the King of Pies, this £25 dish — for which diners jostle on a nightly basis — comprises a hand-raised pie filled with dauphinois­e potato, cheddar and caramelise­d onion, with parsley sauce.
