TODAY’S RECIPE: Sausage & broccoli pasta
FAMILY dinner in minutes. Serves: 4
Ingredients
3-4 tbsp olive oil 1 onion, chopped 4 pork sausages 1 heaped tsp fennel seeds
4 garlic cloves, chopped 400g penne
Method
1 Heat 2 tbsp oil in a pan and fry onion until soft. Squeeze sausagemeat from skins into pan and fry in 1 tbsp oil for five minutes until crisp. Lightly crush fennel seeds using a pestle and mortar, add to pan with garlic for one minute. Remove sausage mixture, set aside.
2 Bring a pan of salted water to boil and cook pasta following pack instructions. Halfway through, add broccoli. When cooked, drain, reserving a mugful of cooking water.
3 Stir broccoli and pasta into sausage mixture. Add lemon juice, chilli flakes and a splash of cooking water. Serve with grated cheese.
