TRY THIS: GREEN OMELETTE BOWL

A hybrid between an omelette and a frittata, this has almost 7g of fibre — and it takes just minutes to prepare, for a deliciousl­y healthy and easy way to start your day. And if you have irritable bowel syndrome (ibS), it’s FOdMAP-lite (see main piece). SER SERVES 1

2 large eggs, beaten

90g 9 courgette, grated

40g 4 frozen peas

25g 2 feta, crumbled,

cheese of choice

1 slice of seeded bread, torn tor into small pieces

10g 10 pine nuts

¼ tsp of dried or handful of fresh fres herbs such as coriander

oregano

COMBINE COM the ingredient­s in a microwave-safe mic dish. Microwave on high for two minutes.

Stir the mix and heat for a further fur minute. If the eggs are still stil runny, continue to microwave mic in 20-second bursts until unt just set; it will keep cooking a little. li Allow to cool for a minute min before tucking in.
