RECIPE: No-cook strawberry & balsamic tartlets
STUNNING summery dessert. Serves: 6 Ingredients
150 ml double cream 50 g icing sugar, plus extra for dusting 2 tbsp balsamic vinegar
Few pinches of cracked black pepper 6 small sweet pastry cases
480 g strawberries, sliced
Method
1 Whisk cream with icing sugar until it just starts to hold its shape. Slowly drizzle in balsamic and cracked black pepper.
2 Spoon a generous portion of cream into tart cases. Fan out strawberries over top of tarts.
3 Dust lightly with icing sugar and scatter with lightly crushed meringue and Thai basil leaves. Add cracked black pepper to finish.
