STORING SPUDS

AS WINTER draws near, check up on long-term stored vegetable crops, especially potatoes. These must remain frost-free but kept cold and dry. If they’re in a place where temperatur­es could fall to 0°c, protect with extra covers or fleeces. Remove any damaged tubers which have begun to rot. Potatoes must be kept fully dark when stored. In daylight, they will gradually turn green due to chlorophyl­l. When that happens, they become toxic. If stored correctly, they will hold their quality. Most will be edible into next spring.
