TODAY’S RECIPE: Mushroom jacket potatoes
FILLING lunch. Serves: 2.
Ingredients
2 large potatoes
2 tsp sunflower oil
250 g mushrooms
100 g sour cream and chive dip
Sprigs of dill (to garnish)
Method
1 Heat oven to 200 c/180 c fan/gas 6. Prick the potatoes all over with a fork and rub with half the sunflower oil. Bake the potatoes for
1 hr 20 mins.
2 Slice the mushrooms, fry in the remaining oil, then stir through half the sour cream and chive dip. Cut a deep cross on the top of each potato, pile the mushrooms into the jacket potatoes and garnish with dill.
