TODAY’S RECIPE: Mushroom & sausage pasta
QUICK and easy. Serves: 4.
Ingredients
4 sausages, meat squeezed from skins
4 bacon rashers, diced
200g mushrooms, chopped
350g pasta shapes
50g parmesan, grated, plus extra shavings to serve
2 egg yolks
Small bunch parsley, finely chopped
2 tbsp creme fraiche
Method
1 Dry-fry the sausage meat in a non-stick pan for eight minutes, breaking it up. Remove and set aside. Fry bacon and mushrooms for five minutes, return sausage meat and keep warm. 2 Cook pasta according to pack instructions and then drain. Make a sauce by beating together cheese, egg yolks, most of the parsley and the creme fraiche.
3 Combine pasta and meat mixture over a low heat and add sauce. Season and mix. Serve in bowls, topped with Parmesan shavings and remaining parsley.
