TODAY’S RECIPE: Cod & chorizo stew
CLASSIC flavour combo. Serves: 4.
Ingredients
1 tbsp olive oil
1 large onion, finely chopped
200g cooking chorizo, in small pieces
400g can chopped tomatoes
4 cod fillets
Method
1 Heat the oil in a deep frying pan and add the onion. Cook over a medium heat for five minutes until starting to soften. Add chorizo and cook for another few minutes to release the oil. Coat onion in chorizo oil, then tip in tomatoes. Fill can with water and tip into pan. Bring to the boil.
2 Once boiling, season cod fillets and nestle into pan. Reduce heat and simmer for seven minutes. Gently mix in butter beans and cook for a couple of minutes until hot. Scatter with parsley and serve in bowls.
