TODAY’S RECIPE: Smoky bacon & tomato spaghetti
HEALTHY and budget friendly. Serves: 4. Ingredients
400g spaghetti
1 tbsp olive oil
120g smoked streaky bacon, in matchsticks
1 onion, chopped
2 tsp sweet smoked paprika
1 garlic clove, chopped 2 x 400g cans chopped tomatoes
To serve: Grated Parmesan
Method
1 Bring a large pan of water to boil and cook spaghetti following pack instructions. Meanwhile, heat oil in a frying pan and cook bacon for three minutes until starting to crisp. Stir in onion and cook for three minutes. Add paprika and garlic, and cook for one minute.
2 Add tomatoes, bring to boil and bubble for five minutes until thickened, stirring every so often to stop it catching. Drain pasta and toss with sauce. Sprinkle with Parmesan to serve.
