TODAY’S RECIPE: Oven-baked pork chops

DELICIOUS family dinner. Serves: 4.

Ingredient­s

1kg new potatoes, halved

6 garlic cloves, bashed

Small handful thyme

4 tbsp olive oil

6 tbsp honey

6 tbsp wholegrain mustard

Method

1 Heat oven to 200c/fan 180c/gas 6. In a shallow roasting tray, toss potatoes, garlic and thyme in oil until coated. Season. Roast for 25 minutes until potatoes are just tender when pierced with a knife.

2 Whisk honey and mustard together. Season pork chops then brush with half of marinade. Nestle into potatoes on baking tray and roast for ten minutes before turning chops and spooning over remaining glaze. Roast for ten minutes until pork is cooked through.
