TODAY’S RECIPE: Super-versatile meatballs
GREAT with potatoes, pasta or rice.
Serves: 4.
Ingredients
½ onion, chopped
85g fresh breadcrumbs
1 tbsp chopped parsley
200g pork mince
200g turkey mince
Grating of nutmeg
1 tbsp plain flour, plus extra for dusting
Rapeseed oil, for frying
1 tbsp butter
400ml hot beef stock
2 tbsp single cream
Method
1 Whizz onion, breadcrumbs and parsley in a food processor. Add pork and turkey mince, nutmeg and seasoning. Pulse to just combine. Form into 20 walnut-sized meatballs and dust with flour. 2 Heat oil in a large frying pan and fry meatballs in batches until browned all over. Drain on kitchen paper. 3 Melt butter in pan, then sprinkle over flour and stir well. Cook for two minutes, then slowly whisk in stock until it is a thick gravy. Return meatballs to pan and cook for five minutes. Stir in cream.
