TODAY’S RECIPE: Mediterran­ean fish stew


FULL of flavour.

Serves: 2


1 tbsp olive oil

½ fennel bulb, sliced

1 onion, chopped

2 garlic cloves, crushed

250ml vegetable stock

1 tsp smoked paprika

400g can cherry tomatoes

1 tsp sherry vinegar

2 hake fillets Handful of parsley, chopped

To serve: Crusty bread


1 Heat oil in a frying pan over a high heat and fry fennel, onion and garlic for one minute before pouring in stock. Bring to a simmer and cook for five minutes until veg is tender.

2 Stir in paprika, tomatoes, vinegar and pinch of sugar. Simmer for five minutes until thickened slightly. Nestle fish into mixture and cover with a lid. Cook for five minutes until fish is cooked through. Sprinkle over parsley and serve with bread on side.
