TODAY’S RECIPE: Salmon pasta
SPEEDY midweek dinner. Serves: 2.
Ingredients
1 vegetable stock cube
200g penne or fusilli
100g green beans
100g smoked salmon, chopped
50g baby spinach
1 spring onion, sliced
50g soft cheese
½ lemon, juiced
1 tbsp grated parmesan
Method
1 Bring a large pan of salted water to the boil, crumble in stock cube and stir to dissolve. Tip in pasta and cook following pack instructions. Add trimmed green beans one minute before end of cooking time.
2 Drain pasta and green beans, reserving a little of the cooking water. Tip pasta and beans back into pan, stir in salmon, spinach, spring onion and soft cheese. Add a little pasta water to loosen. Season. Add lemon juice and stir well. Serve topped with parmesan.
