TODAY’S RECIPE: Braised spring onions
TASTY side dish. Serves 6. Ingredients
25g butter
1 tsp olive oil 2 bunches of spring onions, trimmed 250ml veg stock 2 tsp Dijon mustard 100g frozen peas 1 mint sprig, leaves picked and chopped 50g feta, crumbled ½ lemon
Method
1 Heat butter and oil in a frying pan over a medium heat and fry spring onions for five minutes, covered and turning occasionally, until browned. Mix stock and mustard and pour over spring onions. Bring to a simmer, cover and cook for ten minutes. Remove lid and cook for 15 minutes.
2 Stir in peas and cook for five minutes until peas are cooked, spring onions tender and stock has reduced. Spoon onto a serving plate and scatter over mint leaves, feta and lemon zest. Squeeze over lemon juice.
