TODAY’S RECIPE: Tuscan chicken


CLASSIC Italian dish. Serves: 4.


2 tbsp plain flour

1 tbsp smoked paprika 2 tsp oregano 4 skin-on chicken breasts

80g sundried tomatoes, chopped, plus 1 tbsp oil from jar 4 garlic cloves, grated 125ml white wine 250ml chicken stock 200g spinach 150ml double cream 75g grated parmesan Chopped parsley


1 Combine flour, paprika and oregano in a bowl, and toss chicken breasts to coat. Heat oil in frying pan and cook chicken, skin-side down, for five minutes until golden brown. Turn over and cook for five minutes. Set aside. 2 Cook sundried tomatoes and garlic for one minute. Add wine and return chicken to pan, pour in stock and simmer for five minutes. Add spinach and cook until chicken is cooked through and spinach wilted. Stir in double cream and half of parmesan. Serve with parmesan and parsley.
