TODAY’S RECIPE: Saucy bean baked eggs

QUICK and easy lunch. Serves: 2.

Ingredient­s

2 x 400 g cans cherry tomatoes

400 g can mixed bean salad, drained

200 g baby spinach

4 medium eggs

50 g thinly sliced

Method

1 Tip tomatoes and bean salad into a shallow flameproof casserole. Simmer for ten minutes until reduced. Stir in spinach and cook for five minutes until wilted.

2 Heat grill to medium. Make four indentatio­ns in mixture using back of a spoon and crack an egg in each. Nestle ham in mixture, then grill for four minutes until egg whites are set and yolks runny. Serve with rye bread.
