Protein power omelette

SERVES 1

● 3 large eggs

● Low-calorie cooking spray

● 3 tbsp plain quark or fat-free natural fromage frais

● 50g smoked salmon, cut into thin strips l Pinch of dried dill

● 1 tbsp chopped fresh chives

BREAK the eggs into a jug, season and beat with a fork. Spray a non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Once the pan is hot, pour in the eggs.

As the base begins to set, push the cooked egg into the centre of the pan, allowing the uncooked egg to coat the rest of the pan.

Repeat for 1 minute or until there is no runny egg left, but the surface of the omelette is still moist. Remove the pan from the heat.

Spread the quark or fromage frais down the centre of the omelette. Top with the salmon, then scatter over the dill. Season to taste and fold over to serve.
