Slow-burn baked oats

SERVES 1

● 40g plain porridge oats

● 1 egg, beaten

● 1-2 tbsp fat-free natural or Greek yoghurt, plus 1 tbsp to serve

● 1 tsp vanilla extract

● Fresh or frozen and defrosted fruit, to serve

● 1 level tsp honey, to serve (optional)

PREHEAT your oven to 200c/fan 180c/gas 6. Put all of the ingredient­s into a large bowl and combine thoroughly.

Now tip the mixture into a small ovenproof dish and bake for 20 minutes until browned. Serve warm, topped with the fruit of your choice and more yoghurt. Add a drizzle of honey, if you prefer.
