BOOZY BLONDIES FOR YOUR BESTIES

Bake a batch of boozy blondies for those who enjoy a sip of Irish cream liqueur at Christmas.

MAKES AROUND 16 For the blondie:

200g unsalted butter

150g caster sugar

150g light brown sugar

200g Dr. Oetker White Chocolate (chopped into chunks)

3 medium eggs, beaten

5ml (1 tsp) Dr. Oetker Madagascan Vanilla Extract

100ml Irish cream liqueur 225g plain flour 100g hazelnuts, chopped 100g Dr. Oetker Extra Dark Chocolate Chunks

For the caramel:

150g tinned caramel

45ml (3 tbsp) Irish cream liqueur

For the icing:

100g unsalted butter, softened 200g icing sugar

5ml (1tsp) Dr. Oetker Vanilla Extract 30ml (2tbsp) Irish cream liqueur

METHOD:

Preheat the oven to 190°C/ ★ 170°C fan/gas mark 5. Grease and line a 32x20cm baking tin.

Melt the butter in a pan over a ★ low heat. Once it starts to bubble, remove from the heat and add the sugars and white chocolate. Stir until melted together.

★ Pour into a bowl and leave to cool for 5 mins. Add the eggs and vanilla and whisk the mixture on a high speed for 2-3 mins. This will give your blondie a shiny top.

★ Stir through the Irish cream liqueur and then fold in the flour until just combined. Add the chopped hazelnuts and chocolate chunks and mix in.

★ Pour the mixture into the prepared tin and smooth the top.

★ For the caramel, mix the caramel and Irish cream liqueur together until smooth. Dollop half over the top of the blondie and swirl through with a cocktail stick or knife.

★ Bake the blondie for 45-50 mins until golden brown on top. The edges should be set and the centre still slightly wobbly.

★ Leave to cool in the tin for 30 mins before turning out onto a rack.

★ For the icing, whisk the butter in a large bowl until smooth and glossy. Gradually add the icing sugar and whisk until combined. Pour in the Irish cream liqueur and vanilla and whisk until you have a smooth, light icing.

★ Smooth the icing over the top of the blondie using a palette knife. Drizzle over the leftover caramel and, if you want, sprinkle on chopped hazelnuts and chocolate shavings.

★ Once set, it’s ready to slice and box up for the ultimate boozy gift!
