MINCE PIE BROWNIES FOR TOP-NOTCH TEACHERS

A fusion of festive fabulousne­ss, these mince pie brownies are packed full of flavours with added gold sparkle! A great way for your kids to say ‘thank you’ to a favourite teacher.

MAKES 16 Ingredient­s: For the brownie:

200g Dr. Oetker 72% Extra Dark Chocolate, chopped

250g unsalted butter 4 medium eggs 2.5ml (½ tsp) Dr. Oetker Orange Extract 175g caster sugar 125g plain flour 1.25g (¼ tsp) Dr. Oetker Baking Powder

50g Dr. Oetker Cocoa Powder

300g mincemeat 100g Dr. Oetker Milk Chocolate Chunks

For the crumble:

100g unsalted butter, cold and cubed

75g plain flour

60g caster sugar

½ tsp ground cinnamon 60g almonds, finely chopped

¼ tsp ground nutmeg

To decorate:

Dr. Oetker Reindeer Cheer Sprinkles

Dr. Oetker Gold Pearls

METHOD:

★ Preheat the oven to 180°C/160°C fan/gas mark 4. Grease and line a 32x20cm tin with baking parchment.

★ Put the chocolate and butter in a heatproof bowl and melt in the microwave in 30-second bursts, stirring between each.

★ To make the crumble topping, put all the ingredient­s in a small bowl and mix together with your fingers until you have a breadcrumb­like consistenc­y. Refrigerat­e until needed.

★ Put the sugar, eggs and orange extract in a large bowl and beat by hand using a whisk or an electric hand mixer until thick and pale, around 4 mins.

★ With the beater still running, slowly pour in the melted chocolate mixture. Sift in the flour, baking powder and cocoa powder and fold together. Finally, mix in the mincemeat and chocolate chunks.

★ Tip into the prepared tin and sprinkle over the crumble topping.

★ Bake for 50 mins1 hour until golden on top but still slightly gooey in the middle. Allow to cool in the tin.

★ Once cooled, decorate with sprinkles and gold pearls.

★ Slice the brownie into pieces and box it up, ready to gift.
