Cut BOTH sheets of pastry into 4 equal squares.

Place 4 of the squares on a LIGHTLY GREASED baking sheet and brush the edges with water.

Cut a cross in each of the REMAINING squares,

LEAVING an inch or so of pastry INTACT around the EDGES, and place these squares on top of the others. Pull up the POINTS of each cross, fold them back and glue them in place with water. Brush the rim of EACH pastry CASE with the beaten egg and leave to chill in the fridge. Preheat the oven to Gas Mark 6, 390ºf (200ºc). MELT the BUTTER in a pan and add the sugar, heating GENTLY until the sugar has DISSOLVED. Add the RHUBARB, RASPBERRIE­S and CRANBERRIE­S and cook gently for 5 minutes. Spoon the FRUIT into the cases and bake for 35 MINUTES until golden and risen. Glaze the fruit with GINGER syrup and dust with icing SUGAR to taste. Serve either WARM or cold, ALLOWING half a per serving. Serves 8.
