Hake aways replace cod at chippies

TRADITIONA­L cod and chips could be replaced with hake, as experts claim it is more sustainabl­e.

Hake population­s are booming as climate change leads cod to move north to cooler waters.

Cornish fishmonger Rob Wing said: “There is currently an abundance of hake with strong quotas indicating on- going sustainabi­lity of this fish.”

Craig Maw of awardwinni­ng Kingfisher Fish & Chips in Plympton, Devon says hake is popular.

He said: “It’s similar to cod but sweeter and, personally, I think it makes some of the best fish and chips there is.”

Mitch Tonks, who runs South West restaurant chain Rockfish said hake is “meaty, silky, juicy, versatile and easy to cook”.
