Hake aways replace cod at chippies
TRADITIONAL cod and chips could be replaced with hake, as experts claim it is more sustainable.
Hake populations are booming as climate change leads cod to move north to cooler waters.
Cornish fishmonger Rob Wing said: “There is currently an abundance of hake with strong quotas indicating on- going sustainability of this fish.”
Craig Maw of awardwinning Kingfisher Fish & Chips in Plympton, Devon says hake is popular.
He said: “It’s similar to cod but sweeter and, personally, I think it makes some of the best fish and chips there is.”
Mitch Tonks, who runs South West restaurant chain Rockfish said hake is “meaty, silky, juicy, versatile and easy to cook”.
