Smoked cod with chive mash and peas

1 Boil potatoes in salted water until soft, drain and allow to steam dry. 2 Place fish into a pan, add milk and gently bring to a boil, as soon as it boils turn off heat, cover and leave to cook for around five minutes. 3 Return potatoes to pot along with butter, mash until smooth, add chives then combine and season to taste. 4 Remove fish from milk and keep warm. Return milk to the heat, add cream, peas and Dijon mustard, warm slowly and season. 5 Plate mashed potato, top with smoked cod and generously spoon over the sauce.
