SUMMER is the perfect time to indulge in some fresh and healthy seafood. Crab and noodle salad with sesame seed dressing

SERVES 4 INGREDIENT­S 200g cooked white crab meat; 125g thin rice noodles; 20g coriander, finely chopped; 10g mint, finely chopped; juice of ½ lemon, plus wedges to serve

For the dressing: 2tbsp reduced-salt soy sauce; 1tbsp sesame oil; 1tsp black sesame seeds; 1tsp sesame seeds; 1tsp clear honey; 1 garlic clove, crushed METHOD

Place the noodles in a bowl, cover with boiling water and set aside for 4-5 minutes. Rinse with cold water and drain thoroughly then return to the bowl.

Add the fresh crab meat to the bowl together with coriander, mint and lemon juice.

Mix the dressing ingredient­s together and pour over salad.

Toss gently and serve with lemon wedges to squeeze over.

Monkfish and coconut curry

SERVES FOUR INGREDIENT­S 500g monkfish, cut into 2.5cm chunks; 2tbsp vegetable oil; 3 onions, finely chopped; 3cm piece ginger, peeled and grated; 3 cloves garlic, finely chopped; 8 curry leaves; 2 red chillies, finely chopped; 2 green chillies, finely chopped; Half a tsp ground cumin; 1tsp turmeric; 2tbsp tamarind paste; 1tsp ground coriander; juice of 1 lime; 400ml can reduced-fat coconut milk; 300g long grain rice; chopped fresh coriander to garnish

1 Heat oil in a large pan over a medium heat then add onions, ginger, garlic and curry leaves. Cook for about 5 minutes, until onions are browned.

2 Add the chillies, cumin, turmeric and ground coriander. Cook for 1-2 minutes then add the tamarind paste, lime juice and 150ml water.

3 Add the monkfish to the pan. Pour in coconut milk and bring to the boil, then turn down to a gentle simmer. Season with salt and pepper and allow to cook gently for 5-10 minutes or until the fish is just cooked.

4 While the curry is simmering, cook the rice according to the packet instructio­ns, then drain.

5 Serve the rice with the monkfish curry, garnished with fresh coriander.
