salad (serves two)

mmus, 4 boiled eggs, 2 large handfuls salad leaves, ucumber, 1 handful cherry tomatoes. Dress salad with tra virgin olive oil, 2 tsp balsamic vinegar, lemon juice, pepper.

tuna wrap

of tuna with 3 tbsp mayonnaise. wholegrain tortilla wrap and top ed cheddar, a handful of spinach ced red pepper. to soup (serves two)

Heat 1 tbsp oil and add 1 diced carrot, 1 onion and 2 garlic cloves. Fry for two minutes. Add 400g tin chopped tomatoes, 400g tin cannellini beans, 250ml vegetable stock and cook for 30 minutes. Turn off the heat, add 300ml single cream. Season and blend.
