KEEMA-SPICED COTTAGE PIE

SERVES 4 INGREDIENT­S

1 tablespoon vegetable oil 1 medium onion, finely diced 1/2 teaspoon ground turmeric 2 teaspoons garam masala 1/2 teaspoon cumin seeds 2 garlic cloves, minced 2 teaspoons grated fresh root ginger 2 red chillies, finely chopped 500g beef mince 350g tinned chopped tomatoes 300g frozen peas, defrosted 25g coriander, leaves picked

For the potato topping

1kg peeled potatoes, cut into chunks 150ml milk 80g unsalted butter 1 teaspoon ground turmeric 1 egg yolk

METHOD

Pre-heat the oven to 180C fan/200C/gas mark 6. Heat the oil in a large frying pan over a medium heat.

Add the onion and sauté for 10 minutes until it starts to brown. Add the turmeric, garam masala and cumin seeds and toast for 2 minutes. Add the garlic, ginger and chilli, then sauté for a further 5 minutes until soft and lightly browned. Add the beef mince and sauté until any liquid has evaporated and add the tomatoes and cook for 15 minutes more.

Add the peas and coriander leaves. Taste and adjust the seasoning, if necessary, then spoon into a 24cm round ovenproof pie dish, level the surface and allow to cool.

For the potato topping, boil the potatoes in a pan of salted water for 15–20 minutes or until soft in the centre and then drain. Add the milk, butter and turmeric, then mash together well. Finally, fold in the egg yolk and mix well to combine.

Spread the potato topping over the beef mixture in a 24cm pie dish.

Place in the oven and bake for 30 minutes or until the beef mixture is bubbling and the potato has a golden crust.

ONE of two teenagers killed in a horrific motorbike crash on Thursday was awaiting trial for a savage attack on a schoolboy.

Derek Paton, 19, had been charged with attacking a 15-year-old male, who can’t be named for legal reasons.

He was due to stand trial along with another male, who also cannot be named, accused of assaulting the boy to the danger of his life in an incident in Wishaw on March 7, 2020.

Paton was killed along with passenger Leon Fitzpatric­k, 18, after their scrambler collided with a van in the Lanarkshir­e town just after 4.30pm on Thursday. Paton was pronounced dead at the scene, while Leon was rushed to Wishaw General Hospital, where he died.

The van’s 34-year-old driver escaped with minor injuries.

It is the second tragedy to hit the Paton family – Derek’s 16-year-old brother collapsed and died in 2014.

Tributes from friends and family poured in for the two crash victims.

One friend said: “RIP Derek Paton. I honestly can’t believe it, another young person taken far too soon. Such a heartbreak­ing time for so many people right now.

“Can’t imagine what the family are going through. Thoughts are with them at this devastatin­g time.”

Another added: “I can’t believe it. Fly high ma wee pal. Thoughts are with all yours at this sad time.”

Leon’s aunt, Carole Fitzpatric­kFleming, wrote that she was “heartbroke­n”.

And one of his friends said: “Rest easy up there, Leon. You were such an amazing boy. My thoughts are with your family at this devastatin­g time.”

Sergeant Ryan McAuley, of the Road Policing Unit in Motherwell, said: “Our thoughts are with everyone affected by this crash.

“Our enquiries to establish the full circumstan­ces are ongoing and we would urge anyone with informatio­n to come forward.

“Anyone who may have dashcam or private CCTV footage is asked to check this and pass on anything of note.

“You can pass on informatio­n to police by calling 101, quoting incident 2032 of February 25.”

Police also released a statement, saying: “Two teenagers have died following a road crash on Ryde Road in Wishaw on Thursday.

“The incident involved an off-road motorcycle and a white Volkswagen Crafter van.

“The 19-year-old man rider of the motorcycle was pronounced dead at the scene and an 18-year-old man, who had been riding as a pillion passenger, was taken to Wishaw General Hospital where he later died as a result of his injuries.

“The 34-year-old driver of the van suffered minor injuries.”
