Summer BBQ meat-free sausage casserole

INGREDIENTS
12 frozen meat-free sausages
Red onion
Yellow pepper
Red pepper
400g tinned chopped tomatoes
400g kidney beans
FROM THE STORE CUPBOARD
1 tbsp oil
5 tbsp HP Classic BBQ sauce
BBQ seasoning to taste
Crusty bread (optional)

Cut 1 yellow and 1 red pepper, de-seed and finely slice. Peel and slice the onion.

In a frying pan heat one tablespoon of oil and add the frozen sausages, sliced red peppers and onions. Sprinkle in a generous amount of BBQ seasoning.

Cook over a medium heat for approximately 10-12 minutes or until the sausages are browned and cooked.

Add 1 can of chopped tomatoes, 1 can of kidney beans – including the fluid – and the BBQ sauce.

Bring to the boil then simmer gently for 10 minutes and ensure the sausages are piping hot and cooked right through. Serve with crusty bread.
