The French 75
Created in 1915 at the New York Bar in Paris (later Harry’s New York Bar) by legendary bartender Harry MacElhone. This gin and fizz combo delivered such a kick that it was said to feel like being shelled by the powerful French 75mm field guns that were used in World War I – hence the name. Choose a non-vintage brut Champagne for cocktails. In this drink, I like a gin with citrus character, such as Tanqueray No Ten, which includes lemon, orange and grapefruit botanicals ( Alc 47.3%, £ 29-£ 33 Widely available).

Garnish Lemon twist
Method Put the gin, lemon juice and sugar syrup into a cocktail shaker. Half fill with ice and shake until your hands are cold. Strain into a chilled flute and top with Champagne. Garnish with a lemon twist.
60ml gin
30ml freshly squeezed lemon juice
1 tsp sugar syrup
Champagne to top
