Aged 33 months on lees, the currentrelease Classic NV is made predominantly with grapes from 2016, the third harvest from the estate’s Burge’s Field vineyard. The nose shows chalk and minerals on top of sourdough, bruised apple and spiced apple pie. An intense palate of citrus and yellow apple, with a backbone of piercing acidity.
