ALICE’S TOMATO, SPINACH & FETA TART

In a pan, fry the onion and garlic with oil, and then add the spinach until it has all wilted. Cool and then transfer into the pastry case. Sprinkle the crumbled feta on top.

Whisk the eggs and cream with some salt and pepper, and pour on top of the spinach and feta until it nearly reaches the top of the pastry.

Slice tomatoes in half and place on top.

Bake on 180˚C fan for 35-40 minutes, ensuring it has cooked right through.

Leave to cool slightly, remove from the tin, garnish with basil and serve and enjoy!
