HOW TO FLAME A PUD
To prevent your Christmas dinner being memorable for the wrong reasons, take care when flaming the pud and don’t go mad with the brandy.
1: Carefully turn the pud out onto a deep serving dish or shallow bowl (not a plate). Tuck in coins, if using. Find the matches or a lighter.
2: Take the pudding to the table and dim the lights.
3: In a small pan or in a jug in the microwave, heat 3 tbsp (no more) of brandy until hot to the touch. Take this to the table, light the brandy, then pour over the pudding, gently shaking until the flames have subsided.
