HOW TO FLAME A PUD

To pre­vent your Christ­mas din­ner be­ing mem­o­rable for the wrong rea­sons, take care when flam­ing the pud and don’t go mad with the brandy.

1: Care­fully turn the pud out onto a deep serv­ing dish or shal­low bowl (not a plate). Tuck in coins, if us­ing. Find the matches or a lighter.

2: Take the pud­ding to the ta­ble and dim the lights.

3: In a small pan or in a jug in the mi­crowave, heat 3 tbsp (no more) of brandy un­til hot to the touch. Take this to the ta­ble, light the brandy, then pour over the pud­ding, gen­tly shak­ing un­til the flames have sub­sided.
