PRATAP’S BHUNA SAUCE

Make this at home and use it with what­ever meat, fish or veg­eta­bles you fancy.

Heat some oil in a pan and add a bayleaf and cumin seed. Brown an onion and add two tea­spoons of gin­ger, along with some gar­lic paste and chopped toma­toes, chilli paste, ta­marind, cumin, co­rian­der and chilli salt. Add wa­ter, or re­duce the sauce, to achieve the thick­ness you re­quire for your dish. You can add co­cunut milk or cream for a sauce that goes well with fish.
