Orange, red onion and pomegranat­e salad

Ingredient­s:

1 large red onion, peeled and thinly sliced

6 oranges, peeled and cut into round segments 1 pomegranat­e 3 tbsp chopped fresh mint leaves

Dressing:

juice and zest of one lime 1 tbsp olive oil 1 tbsp apple cider vinegar sugar salt pepper

Arrange all the salad ingredient­s onto a salad platter. It will look really festive with all the orange, red from the pomegranat­e and green from the mint and purple from the red onion.

Mix all the ingredient­s from the dressing and taste. Adjust the seasoning before drizzling over the salad.
