Kale
KALE is a very nutritious vegetable, packed with nutrients and anti-oxidants that help the body sustain good health.
It belongs in the cruciferous family – also includes vegetables such as broccoli and cabbage – which help in the prevention of heart disease, cancer and neurological diseases.
There are many varieties of kale that can easily be grown from seed for ornamental purposes (as well as being edible), and their stems are red, pink, lavender, blue or violet.
Kale is a real superfood, high in fibre and jam-packed full of vitamins K, A and C, iron, magnesium, calcium, as well as antioxidants such as carotenoids and flavonoids.
As it is low in calories (a cup of kale has only 36 calories and five grams of fibre), it is ideal for those wishing to diet.
Kale also has anti-inflammatory properties due to the presence of omega-3; helpful in cases of arthritis.
It has an earthy flavour, with a crunchy texture even after cooking. It can be juiced with other vegetables and fruits; for example, carrots, apples, celery and kale juiced together make a nutritious, healthy drink.
