CHERRY COLA flOAT
Serves two Ingredients:
■ 200g fresh cherries, pitted, plus a few extra for garnishing
■ 30g-50g caster sugar – depending on the sweetness of the cherries
■ 150ml water
■ 6 scoops vanilla ice cream
■ 400ml diet cola
■ fresh whipped cream
■ grated chocolate
Method:
■ In a saucepan, bring the pitted cherries and water to the boil and then lower the heat to a simmer. Let the cherries simmer for about six-seven minutes.
■ Take about half a teaspoonful of the cooked cherries and taste once cooled slightly. Add the caster sugar according to taste. Stir until dissolved and then blitz using a handheld blender. Place in the refrigerator.
■ Once chilled, divide into two large glasses, then top with the diet cola. Add three scoops of vanilla ice cream on top and then a dollop of whipped cream.
■ Garnish with grated chocolate and a few reserved pitted cherries. Serve it immediately.
