Pear and almond crumble

Ingredient­s:

■ 5 pears

■ juice from ½ lemon

■ 125g pitted dates

■ 75g golden caster sugar

■ 75g butter, melted

■ 50g self raising flour

■ 100g ground almond flour

■ 70g slivered almonds

■ 1 tsp ground cinnamon

■ thick cream or hot custard to serve

Method:

■ Preheat the oven to 200 °C.

■ Wash and core the pears and cut into slices. Place into a large bowl and add one tablespoon of the golden caster sugar and the juice of half a lemon and a splash of water.

■ Arrange the slices in a round 22cm baking dish. Cover with foil and bake in the preheated oven until soft, for 15 minutes or so.

■ Meanwhile, make the crumble topping by combining the self raising flour, remaining golden caster sugar, melted butter, ground almond flour, slivered almonds and the ground cinnamon powder. Once mixed it should resemble breadcrumb­s.

■ Take out the baked pears and carefully take off the foil, add the roughly chopped pitted dates and stir. Then sprinkle the crumble over the top and bake for a further 20 minutes, uncovered until the crumble is golden brown. Serve hot with thick cream or hot custard.
